Is the given set to be used in this puzzle a subset of the numbers 1-9?

If the answer to this question is yes, I think the presentation could be greatly simplified by simply calling this variation "Between X and Y", which is a small generalisation of the variation "Between 1 and 9".

The instructions say "Fill in the remaining blank cells with digits..." The answer to this question is yes, digit 0 will not be used.

Slightly late to the party, but that wouldn't be an equivalent representation anyway, since in your variant, if no digits X or Y were given in the starting grid then there would be at least two solutions - one obtained from the other by exchanging all X's for Y's.
